"Enfrijoladas" (Tortillas in Bean Sauce)
0.55 lb. (¼ kg) black beans
1 onion
½ clove garlic
3 lightly-roasted avocado leaves
3 roasted green or pasilla chiles
0.55 lb. (¼ kg) pork lard
1 lb. (½ kg) tortillas
½ thinly sliced onion
1 dairy cheese
2 chopped parsley
Salt to taste
Preparation:
Simmer beans with salt, onion and garlic. Blend with avocado leaves and chile. Fry the mixture in a pot with one tablespoon of lard, add bean broth and cook until it has the consistency of light custard. Fry tortillas in the remainder lard, then soak in the beans, folding in four, until soft. Place on a platter and decorate with onion, cheese and parsley. Serve immediately. Can be served with chile -fried beef or strips of beef.
