Melon Horchata
1 cup rice
1 cup of dry melon seeds
10 par-boiled, peeled almonds
1 stick of cinnamon
Water, as needed
Sugar as needed
Peel of one lime
Preparation:
Wash rice, soak in cold water and drain. Grind the melon seeds, almonds, rice and cinnamon with a little water. Strain through a cloth. Add more water, sugar to taste, and lastly, the chopped lime peel.
Serve very cold, with small pieces of melon and chopped nuts.
