Oaxacan Sauce
2 garlic cloves
1 lb. (½ kg) tomatoes (roasted )
3 chiles de agua (roasted)
1 tbsp. chopped onion
2 tbsp. chopped cilantro
Salt
Preparation:
Grind garlic, salt and tomatoes in a chimolera (or mortar). Roast chiles and cut into thin slices. Add to sauce with the chopped onion.
Check salt content and add cilantro.
