Rice with Bean Broth
2 cups rice
Oil
1 cup cooked black beans
3 garlic cloves
½ small onion
3 cups water
1 avocado leaf
Cream and non-ripened cheese
Salt to taste
Preparation:
Soak rice in hot water for several minutes and rinse with cold water. Drain well and fry in a good amount of grease until the grains separate, but do not brown. Drain oil and add four cups of drained black bean broth (one cup of cooked black beans ground together with three cups of water, garlic, onion and the avocado leaf). Check salt content, lower heat and cover until completely cooked. Rice should be dry. Can be served with cream and non-ripened cheese.
